This Armenian inspired, healthy, vegan noodle soup is generally made with small shell pasta and garbanzo beans, perfect soup for any cold day. Simple yet delicious, great addition to your menu.



  1. Heat the oil in a large pot, add the chopped onions, cook stirring on high heat for a few minutes until the onions become transparent, add salt, pepper, tomato paste, pepper paste, garlic and stir for a few minutes, lower the heat, add vegetable broth and water, bring to boil, add the lemon juice pasta, garbanzo beans and cook on medium heat until the pasta is cooked, last few minutes, add the dry mint, stir, adjust salt and pepper to taste.
