Zucchini Patties, one of the best ways to use up summer Zucchini, fast, easy and so tasty. These make the perfect appetizer or side dish. For those who are vegan, you may have these patties with Tahini Sauce instead of yogurt.
- In a medium bowl, combine the zucchini, potatoes, onion, flour, Flex seeds (prepare per instructions) and salt, stir well enough to distribute ingredients evenly. Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls and cook for a few minutes on each side until golden.
