This Vegan healthy pasta is packed with flavors and so simple to make.



  1. Prepare pasta according to package directions. Drain.
  2. Meanwhile, in large skillet, heat oil over medium heat. Add artichoke hearts, tomatoes, onions,
    garlic, spinach, and herb seasoning (red pepper flakes; salt, Italian seasoning). Sauté 3-4 minutes.
  3. Add cooked pasta, toss to coat.
  4. Serve and enjoy!


  • Serve with a green salad.
  • Wine Pairing: Chardonnay
  • If not vegan – Stir in cooked shrimp or chicken, if desired.
