Spaghetti w/Artichoke & Spinach
This Vegan healthy pasta is packed with flavors and so simple to make.
- Prepare pasta according to package directions. Drain.
- Meanwhile, in large skillet, heat oil over medium heat. Add artichoke hearts, tomatoes, onions,
garlic, spinach, and herb seasoning (red pepper flakes; salt, Italian seasoning). Sauté 3-4 minutes.
- Add cooked pasta, toss to coat.
- Serve and enjoy!
- Serve with a green salad.
- Wine Pairing: Chardonnay
- If not vegan – Stir in cooked shrimp or chicken, if desired.
