Falafel

Here is a delicious recipe for Falafel from scratch.

Ingredients:

  • 1 cup dried chickpeas
  • 1⁄2 large onion, roughly chopped
  • 1⁄2 cup fresh parsley
  • ¼ cup cilantroSalt to taste (about 1 tsp)
  • 4 cloves garlic
  • 2 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp baking powder
  • 4 tbsp all-purpose flour

Instructions:

Soak the chickpeas for 24 hours in a large bowl. covered by at least a couple of inches of water, drain the chickpeas and place them in a food processor long with the onions, parsley, cilantro, salt, garlic, ground coriander and cumin. Process until the mixture is well blended and chopped but not pureed then transfer the mixture to a bowl, sprinkle with flour and baking powder and mix well, form the falafel mixture into little balls about the size of one heaping tablespoon, flatten slightly and place on a parchment lined tray, place the tray in the fridge for about an hour to let the mixture set. Heat oil, on medium high, add the falafel balls to the skillet, cook the falafel on each side for 60 seconds, until all sides have turned a golden color.

Tahini Dressing:

  • 1 cup tahini (sesame paste)
  • 1 tbsp lemon juice
  • 1 tsp cumin
  • Water to thin
  • 2 tbsp parsley (chopped)
  • Salt to taste
  • Tahini Sauce: Whisk together all ingredients, add water in small portions, until the sauce has a consistency that you can pour over Falafel.

Note – I highly suggest using uncooked garbanzo beans, rather then canned.
