- 2 tbsp olive oil
- 1 onion (chopped)
- 3 Celery sticks (sliced)
- 1 Parsnip (chopped)
- 4 Large potatoes (chopped)
- 1 can diced tomatoes or 3 fresh tomatoes (chopped)
- 32 oz vegetable broth + 2 cups water
- Salt, Red pepper to taste
- 2 Garlic cloves (mashed)
Sauté all vegetables expect tomatoes for 5 minutes, add water, vegetable broth, tomatoes salt and pepper, bring soup to a boil, cover the pot and reduce heat to medium-low, simmer until vegetables have softened completely, approximately 25 minutes.
Blend soup until smooth, if needed adjust seasoning and serve, enjoy!
