
Ingredients:
Meatballs:
1 lb minced beef (Chi kofte meat)
3 cup finest bulgur #1 (Chi Kofte Bulgur)
2 Tbsp Pepper paste
2 Tbsp Farina
Salt to taste
Instructions:
In a large tray combine the Pepper Paste, Salt, and bulgur, add ¼ cup of water and mix, add the meat and knead well. Take small portions and shape into balls, it should be size of a nickel. Heat ½ cup oil in a frying pan, and lightly fry the meatballs and drain on paper towel and set aside.
Yogurt soup
Ingredients:
2 tbsp butter
32 oz plain yogurt
1 tbsp lebni (Greek yogurt, plain)
2 tbsp dried mint
32 oz chicken broth
16 oz water
Salt to taste
Instructions:
In the pot, add chicken broth, water and butter, let it boil, separately in a bowl, add yogurt, lebni, egg and mint, mix well, once the butter starts to melt, add the yogurt mixture, and stir constantly, for 15 minutes.
If you are adding meatballs (glorig kufte), after adding the yogurt mixture, stir for 5 minutes, and add the kufte and boil for additional 10 minutes.
