Chicken with veggies (rolled)

Ingredients:

2 full Chicken breasts (sliced fillet)

1 medium onion (chopped)

1 medium carrot (grated)

10 oz fresh mushrooms (chopped)

1 ½ cup grated cheddar cheese (divided into two parts)

2 tbsp Greek yogurt (may use sour cream)

1 egg

Spices:

Baharat (Mediterranean blended spice)

Salt & pepper

Instructions:

Filling: In a skillet, add vegetable oil, sauté vegetables (onions, carrots, mushrooms), remove them from the pan onto a plate and let them cool, once they are no longer warm, add half of the cheese, mix well.

Chicken: Pound the chicken fillets using rolling pin, to flatten and tenderize the chicken, add spices on one side, place the filling on the chicken pieces and roll into rolls, and place them on a baking dish next to one another.

Sauce: Mix 1 egg, 2 tablespoons of sour cream (Greek yogurt) and half of the cheese, pour the sauce over the chicken and bake for 30 minutes on 375 degrees.
